My basic approach to blues is simple:
I7: Use minor pentatonic, add a maj3 for SPICE
IV7: Use minor pentatonic, but add the b6 (to get the IV sound)
V7: Use minor pentatonic but in the key of the V chord (E in this case), but raise the 3rd to G# (to get the V sound)
